Nothing here is cooked in advance and held. Your karahi goes on the fire when the order reaches the kitchen, the skewers hit the charcoal when you ask for them, and the bread is baked while you wait for it.
That is slower than a buffet, and it is the entire point. What reaches your table is what a kitchen produces when nobody is cutting corners.
